Test Group Day 1

So I got into an exclusive test group for a new timed nutrition and workout plan that lasts 80 Days. I’m excited because I need to keep up on workouts and this will motivate me to keep going!

Today I made spaghetti squash in the Instant Pot because it cooks so quickly and I can walk away from it. I hate having to turn on the oven for a small thing like this, so the IP is perfect.

  1. Cut squashes in half with a sharp knife
  2. Scoop out seeds
  3. Add 1c of water to the Instant Pot
  4. Put in the trivet
  5. Add the squash cut side up
  6. Cook on high pressure (HP) for 8 min with quick release of pressure when it’s done.

For my next meal I needed to eat a fruit, veggie and fat. I accidentally created the most amazing thing.

Ok, first, for those of you who don’t know me, I grew up in Cleveland area. My dad took us to Skyline Chili any time he had to feed us between our activities and Mom was away. Spaghetti with chili and cheese was a staple as well as the coneys. I love the flavors.

Today, I made a gluten free, chili free, 3 way with spaghetti squash, by accident!!

After the spaghetti squash was cooked, I dumped 1💚 in my bowl with 1💙 of shredded cheddar cheese and about 1/2t of taco seasoning. It blew me away with how much it tasted like Skyline spaghetti but without the heavy noodles or chili. Just the chili flavor with lots of melted cheese and a noodlelike texture. Win! I’ll be making this again. Easy and delicious. Spices make the difference.

Core De Force day 11

When I first started working out, I couldn’t do a single push-up on knees or otherwise. Yay for making progress.

Have you seen the FB video about cauliflower rice stir fry? I’ve been making it’s and it’s yummy.

The day after vacation…

is so wicked hard. Back to schedules and cooking and cleaning. Back to regular life and bills. It feels so awesome to sleep in your own bed again that you just want to stay there.

All black seemed appropriate for today

I let myself scroll FB for a while to catch up on what I missed in my friends’ feeds while I was away. Then I made myself get up and face the music. Make the bed. Weigh in. Get dressed to work out. Take preworkout. Write out goals for the month while it kicks in.

  • No spend month – I don’t usually put things in the negative but I need to remind myself to cut back on stupid expenses. Unsubscribing from stupid clothes emails will help. I really don’t need that outfit you’re trying to sell me.
  • No dairy, gluten or sugar – no, I don’t have celiac officially. I just know that these 3 really do a job on my GI tract and I’m better off without them.
  • Take the time to tidy KM way. I have started KonMari a couple times but haven’t made it all the way through. The areas I’ve done have stayed awesome. I want my whole house to spark joy. It will also help with #1. So often I’ll buy stuff I already have because I forgot I got it (ask hubby about Phantom of the Opera sometime. He loves to tease me about it.)

Wonderful Wednesday

We dropped Grampy off at the Greyhound then came home to COOK!  It’s cauliflower cooking day since we found amazing cauliflower rice at Costco this week.

Go KOP Costco!!!!

First we made some FixAte cookbook Grandma Calabrese tomato sauce.

I always double the recipe and use good drinking wine and cheese

Then we made some Nom Nom Paleo meatballs. These are in her cookbook only so go get it! Dairy free, gluten free, egg free and kid approved.

A byproduct is amazing mashed cauliflower. I love it with some ghee or nutritional yeast.

After we ate the yummy meatballs, it was time to make some Autumn Calabrese gluten free cauliflower breadsticks. They were delicious.

It was a very productive day full of yummy cauliflower food.
